Origin: Mexico, Altura Montana Maya 

Taste notes: Flavours of chocolate cake, light spices, panela sugar and dried fruits undertone with a burnt caramel aftertaste. Low acidity and medium round body.

Espresso Recipe: 1:2 coffee-to-espresso ratio with a 25-30 second extraction.

Plunger Recipe: Use a 1:12 coffee-to-water ratio. 

  1. Measure: Add 30g of coffee to your plunger.
  2. Bloom: Pour 40ml of hot water (90-95°C) over the grounds, stir gently, and let it bloom for 30 seconds.
  3. Brew: Add the remaining 310ml of water and let it steep for 4 minutes.
  4. Plunge & Enjoy: Slowly press the plunger down and serve immediately.

Cold Brew Coffee Ratio:

  • Strong Brew (1:8): 125 grams of coffee to 1 liter of water.
  • Milder Brew (1:10): 100 grams of coffee to 1 liter of water.

Mix coffee and water in a jar, refrigerate for 12-24 hours, strain, and serve over ice. Enjoy!
